Grilled BBQ Shrimp and Avocado Bruschetta

Grilled BBQ Shrimp and Avocado Bruschetta

Marinated Shrimp

  • 12 large shrimp
  • 1 tablespoon olive oil
  • Garlic, chopped
  • Salt and pepper to taste
  • Favorite BBQ seasoning to taste

Baguette Bread

  • Butter

Bruschetta Mix

  • 1 pint cherry tomatoes, chopped
  • 2 tablespoons red onion, chopped
  • 1/4 cup cilantro or basil, rough chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Avocado Smashed

  • 2 avocados
  • Salt and pepper to taste

Instructions:

  1. Assemble bruschetta mix. It is best if you mix it the day before.
  2. Place the shrimp in the marinade for 4 to 6 hours; then put on skewers.
  3. Melt butter and spread over each side of the cut baguette.
  4. Grill the shrimp on each side until done on a medium to high heat grill. While shrimp is cooking, grill the cut baguette bread.
  5. Spread the seasoned smashed avocado on the grilled bread.
  6. Place a tablespoon or two of the tomato mix on half of the bread.
  7. Put one or two pieces of shrimp on the avocado and serve.
