Pan seared Salmon with a Lemon Garlic Chimichurri and Char Roasted Cherry Tomatoes

Recipe:

  • 4 – 6oz Salmon fillets
  • Salt and pepper – to taste
  • Cherry tomatoes
  • Oil
  • Sea salt

Lemon Chimichurri:

  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • Juice of one lemon
  • ½ cup of fresh packed parsley
  • 2 tbsp of fresh oregano and 2 tbsp of fresh mint
  • 4 cloves of garlic
  • ¼ cup of finely chopped red onion
  • 1 tsp of red chili flakes
  • ¼ tsp coarse sea salt
  • Zest of one lemon

Directions:

Season both sides of the Salmon with salt and pepper to taste. Toss the cherry tomatoes in olive oil and season with sea salt. Prepare the chimichurri – finely chop the fresh herb and place in a mixing bowl. Add the remaining ingredients and mix well.

Heat the sauté pan on medium and add olive oil. Place the seasoned Salmon in the pan and brown on each side. Add the cherry tomatoes and blister turning occasionally. Once the Salmon reaches an internal temp of 140 or more remove from the heat. On a plate place the char roasted cherry tomatoes. Put the Salmon on half or the tomatoes. Garnish with the Lemon Chimichurri and enjoy.
